Clark Hollow Hops was founded in 2012. We planted a test plot of 120 Cascade, Newport, Centennial, and Perle in the spring of 2013 on, appropriately, Clark Hollow Road in the Town of Fabius, New York. We subsequently purchased a 5 acre plot of pristine farmland around the corner, also in Fabius, and planted 2100 of these same varieties in the spring of 2014.
Our hops are grown as sustainably and as naturally as possible. We plan to use integrated pest management and other non-chemical measures to manage the anticipated common hop yard pests and diseases and weeds, seeking as natural and "organic" chemical applications in order to save our crop when necessary. We routinely consult with more experienced growers both locally and across the country to gain insight into holistic, natural practices for the benefit of our soils and of course our hops.
We look forward to working with New York hop growers and brewers to provide a steady source of local quality hops, share resources, and educate each other so that New York can be seen as a valuable source for hops within the Northeast and quality beer can be brewed with local ingredients.
We are looking to become a spotlight agritourism destination for the Town of Fabius and for Onondaga County.
