Clark Hollow Hops
Clark Hollow Hops was founded in 2012. We planted a small plot of Cascade, Newport, Centennial, and Perle in the spring of 2013 on, appropriately, Clark Hollow Road in the Town of Fabius, New York. We fell in love with hop farming, formed our company, and purchased a 5 acre plot of pristine farmland around the corner, also in Fabius, and planted 2 acres of these same varieties in the spring of 2014.
Over the summer and fall of 2015, we installed our third acre trellis and added Crystal, along with additional Cascade and Centennial.
Our hops are grown as naturally as possible. We use integrated pest management and other non-chemical measures whenever possible to manage the anticipated common hop yard pests and diseases and weeds, while seeking bio-based and organic chemical applications when needed. We continuously consult with more experienced growers both locally and across the country to gain insight into holistic, natural practices for the benefit of our soils and of course our hops.
We look forward to working with hop growers and brewers to provide a steady source of local quality hops, share resources, and educate each other so that New York can be seen as a valuable source for hops within the Northeast and quality beer can be brewed with local ingredients.
We are looking to become a spotlight agritourism destination for the Town of Fabius and for Onondaga County.

"This year’s batch of HOPONDAGA is made with over 40 lbs of freshly picked Cascade hops from Clark Hollow Hops that went from field to fermenter in about 6 hours, seriously fresh. These 2016 Cascades were exceptionally well grown and supremely aromatic. They contributed big time citrusy orange peel and juicy peach flavors and aromas with a deceptive bitterness which starts at 0 and builds on the palate through a pint -"

Introducing the Pompius Plucker!
In 2015 we designed the Pompius Plucker and made some adjustments during the 2016 off-season. We are now satisfied with the prototype and considering replicating the model for sale to other small acreage hop farmers and making our unit available for use by other local small acreage farms. She picked an average of 130 bines/hour, no matter the size, with a 90-95% clean pick. Leaf matter on the output is minimal (nothing is perfect).
This unit, while heavy and standing 10' high by 18' long, is portable, all electric (standard single phase 50A outlet or generator), and fully adjustable in order to be able to handle both young and mature hop bines, and cones of varying sizes, features we demanded and did not see in the market so far.
